Raspberry, chocolate and pistachio pancakes

Saturday mornings is for pancakes in our family. They always go down a treat, and are quick and easy to make. They are also very versatile! This recipe is one of the favourites for adults and kids.

Ingredients

135g self raising flour

Teaspoon baking powder

130 ml whole milk (or milk alternative)

1 egg

A squeeze of honey

Sprinkle of salt

15g butter

Handful of raspberries - I use frozen in winter and fresh in summer

Handful of dark chocolate chips

Handful of pistachios, chopped roughly

Maple syrup

Kefir or Greek plain yogurt

Method

1. Mix the dry ingredients with the milk

2. Beat in the egg

3. Melt the butter in the frying pan

4. Pour it out into the pancake mixture and stir

5. Add raspberries and chocolate chips

6. Fry pancakes in the frying pan, which should have a light coating of melted butter still. One and a half heaped tablespoon per pancake This recipe should make 4-5 pancakes.

7. Flip the pancakes when you can see some bubbles forming in the frying mixtures and they seem to be firming up at the edges

8. Once cooked, serve with more raspberries and yogurt. Sprinkle with pistachios and drizzle with maple syrup.

Peanut butter and banana porridge

Starting the day with a good breakfast helps the children have the energy they need for their active lives, and helps reduce mood swings and tantrums in the morning. We experiment with different flavours. 

Ingredients

110g porridge oats - we use ground oats, which can be bought ready made or prepared at home, with no added ingredients

140ml milk - we use organic whole cows milk. Alternative milk could be coconut milk which is rich and creamy

Tablespoon peanut butter

Half a banana, chopped into pieces

Maple syrup or honey

Method

1. Mix the oats and milk

2. Cook in a microwave for 2 minutes (stirring halfway through). You can also heat on the hob on a medium heat, stirring all the time. The final consistency should be creamy.

3. Add the peanut butter and maple syrup and stir

4. Add chopped banana. 

5. Serve with chopped nuts, dates, yogurt (optional)
