March meals

I thought I would share our meals this week. Our 4 year old ate everything, except for the night we ate dhal - she had rice with veggies, because although it wasn't too spicy, she just isn't a fan.

Monday: pasta puttanesca, with tinned sardines and buckwheat pasta
Tuesday: Roast vegetables (parsnips, carrots, potatoes, leeks, shallots), halloumi and couscous
Wednesdsy: dhal made with red split lentils and chana dhal (chickpeas), sweet potato and cavalo nero, with plenty of mustard seeds and curry leaves for flavour. Served with brown basmati rice and keffir yogurt.
Thursday: ginger fried rice, with smoked mackeral, a variety of vegetables and served . with lime and a sprinkle of sesame seeds.
Friday: Grilled salmon with lemon, steamed tenderstem broccoli and asparagus
Saturday: slow cooked bean and veg chilli (save and freeze half)
Sunday: cauliflower, broccoli and macaroni cheese with green salad (for a playdate, so very child friendly)

I'm taking advantage of my husband's last week of paternity leave for lots of cooking. I have frozen food ready if required next week, including homemade bean chilli, dhal, cottage pie, but I am pretty confident I won't need to resort to this yet. Let's see how it goes!
