June meals

Getting ready for a phased return to work, so thinking about some batch cooking for the freezer, whilst also enjoying summer foods. Here are some of my favourites:

For the freezer:
- turkey Milanese:
Ingredients=
turkey breast
Breadcrumbs
Garlic, finely chopped
Parsley, finely chopped
Grated lemon rind
Eggs

Method=
Mix the breadcrumbs, garlic and herbs and season with salt and pepper
Tenderise the turkey by bathing it flat with a heavy wooden rolling pin or bottle.
Prepare two bowls: one with beaten egg and the other with breadcrumb mix.
Dip the turkey into the beaten egg.
Then place it into the crumbs and press down on each side.
They can either be frozen (remember to keep each one separated) or baked in the oven at 200C /180 Fan for 15-20 minutes or until golden. Add another 5-10 minutes if cooking from frozen

These are such a hit in our house, and have a tomayoc origin, since it was the first dish I ever made my husband, albeit with more traditional steak instead or turkey. Serves with steamed greens or a fresh salad with lemon dressing.


BBQ
-lamb and pistachio kofte, pepper and onion skewers and served with lime flatbreads and mint yogurt

Quick meals
- pea and basil pesto with a good quality pasta
-tuna salad: combine best quality tinned tuna you can, with cooked new potatoes, green beans, tomatoes, asparagus, capers, spring onions and served with boiled eggs. A dressing with honey and whole grain mustard pulls it all together.

Sweet treats
- better for you chocolate cookies: these can be served with ice cream, almond butter, or just with a cuppa. Can be vegan, if substituting butter with coconut oil. I use wholewheat flour and chia or flax seeds instead of egg. 40grams cocoa powder, 180 grams buckwheat flower, 120 grams melted butter, 3 tablespoons ground chia or flax seeds, with 3 tablespoons of water. Optional chocolate chips. Mix all together and place in fridge to cool for 10 minutes, then roll out and shape (you can use cookie cutters if you like). Place on baking tray in oven at 180C or 170 fan for 10 minutes, then allow to cool before eating.
